Pie...anyone

Okay I'll stop after this...... I just love ta try new things , I thought you guys might too.


I make these alot for my mother, she is a diabetic.
These pies don't contain ALOT of protein but they are low in fat and sugar.


* Lemon Meringue Pie

Beat 2 eggs yolks (put the whites aside for the Meringue)
Add 1/4c. lemon juice beat these together.
Then mix in 1 can of Fat free Eagle Brand Milk.
Pour into a Reduced Fat graham cracker crust.
Top w/ Meringue

* Meringue: Beat egg whites until stiff (this does take 2-5 min) Add 2 pack of splenda while beating, and 1/2 tsp vanilla. Put on pie and Browm Meringue in oven (3-4 min. @ 375 degrees.) keep refrigerated.


*Pineapple and Coconut Pie

(this one has a little more fat due to the coconut, you can lower the amount used)


Mix 1 can of fat free Eagle Brand Milk w/ 1/2c. lemon juice. Add this to 1 can of crushed pineapple (drained good) mixed w/ 16oz. fat free cool whip, 1/2c coconut
Put in reduced fat graham cracker crust and refrigerate for 'bout 4-5 hrs. before eating.


Like I said before, these do not contain high amounts of protein but they are perfect for when you have guest over and need a dessert but don't wanna blow your diet.
