You may want to fill in your profile, give us a litte more to work with here. I'd start out with the exercise program that FT gives you, along with the nutrition program minus a few carbs.
If you're trying to lose weight (As am I) you're going to want to cut about 400 calories from the FT diet and keep your cardio up. 3 X 30 minutes a week isn't a bad start.
For stretching, I've always been told (if I'm wrong, someone please correct me) to hold each stretch for about 8 seconds. If you're going to a gym, they should have posters with a bunch of good stretches to try, at least mine does.
I'm not overly knowledgeable, but I'm just starting out too, so I'm just telling you what I've learned.
