Last week I ended up very sick and was unable to do my workout. Can anyone tell me how to change the dates so I get the full 8 weeks of training that I want? Any input would be very helpful. Thanks everyone!

Not absolutley sure.. but try restarting the program from scratch, as if you were selecting a whole new program. That should reset it. I don't think there is a way to turn back a week.. but luckily you're at the beginning still and not half way through! Good luck.
