When peeling hard boiled eggs, sometimes the shells come right off; other times I spend forever picking off little micro-pieces. The shell seems to stick to that clear layer of skin. If you peel that off the shell comes right off with it, but sometimes that is impossible. Is there some part of the cooking/cooling process that affects an egg's "peelability" or is it the type of egg or what? Eggs from the same batch have different peelability factors. Anybody here have any suggestions? Or should Bretto just get a life and worry about more important things? :0)

You answerd your question, Just kidding. I found same thing so I stoped doing it. Found egg whites in a carton works great pour it int pan cook eat great. Other solution peel while hot under cool water asuming you do this to discard the yoke you can also try omege 3 eggs these are great you can eat the yoke next to no fat the chicken are fed flax seed instead of grain so the cholesteral is the good kind. There is a couple of ideas

I've never heard of omega 3 eggs! Do they taste the same? Sorry I don't have an answer to your question bretto, but you do come up with some humdingers! lol =)

Hi Lumina The omega 3 eggs have been on the market for about a year that I know about in Canada I am not sure in the states they tast great not a lot of difference that I have noticed. I was sceptical at first but there ok. And it sure beats separating the yokes lots of protein I can get the same protein in three omega 3 eggs I would get from 8 egg whites with only 3.5g of fat.

The best way to get hard boiled eggs out is the dump out the hot water and run very cold water over them fill the pot up a few time with cold water and dump. as soon as the pot is cool to the touch fill with cold water and let stand for a few minutes. Then either under running water or in the pot filled with cold water peel. Try that!

Just overcook them!!!! No, it's darn serious! What I do is to turn off the heat when the water is boiling and then I leave the eggs in the hot water for around 20 mins.
So nice and eeeeeasy to peel afterwards.....
