You need to be sure you get enough protein and make sure it is complete protein. That means food combining.

There are some hemp and rice protein powders out there, look for one and start supplementing twice a day with it, as a snack between meals.

Eat six times a day, figure out your caloric needs and divide it by six. Stick to complex carbohydrates - whole grains and vegetables, fruit in the morning.

tempeh, soy, and legumes need to play a big role in your meals for protein sources.

Your hardest thing will be getting enough protein, while keeping your carbs down, but if you stick with fibrous things like legumes/beans , you should be alright.

There is an at-home, no-equipment workout here - look at the top of the page for the button that says 'exercise program' follow the link and answer the questions, it will generate a workout for you.

There are some really good vegan cookbooks and resources - do some looking online or at the library if you need recipes, etc.

Exactly what asimmer said, plus, make sure you supplement with somehow with B12 - vegan diets always lack this important vitamin.

And definitely take a look at the lifting programs here...
