Weight gain- Eureeka!

I am a hard gainer with the difficulty of consuming an adaquate number of calories, but the following idea occured to me- whatever calories I'm missing I could make up for in wheat bread and olive oil. Or peanut butter and jelly. I can't get enough of that stuff. I can consume the adaquate amount of protein (about 200 g), but its calories that I'm always missing. However, under no circumstances do I wanna get fat. I actually wanna burn some fat around my abs. So, could you tell me if the bread and olive oil would be a good caloric suppliment. Do you think I could bulk up some (the lean muscle look) with only weight lifting 4 times a week? If so, what should the routine breakdown be per day? Should i incorporate cardio into my workouts, like HIIT? There is an ongoing arguent over whether or not fat can be burned and musle gained simultaneously, so if it can't be, I don't wanna include too much cardio cuz if my body adapts to it, it'll be twice as hard to burn the fat.

Also, what rules would you use as a mark of whether or not your workout is intense enough?

Is this a good chest workout?:
Bench press 4 sets of 5
inclined dumbbell press- 3 sets of 10-15
declined ebnch press- 3 sets of 8-12
dumbbell flies- 3 sets of 6-8
The reason I go for high reps on the dumbbell exercises is becase I can only fit so much weight on them.
