What is the correct order to them? Is there a correct order? I've heard people say do cardio after weights, but I'm just wondering if it really matters.

It can mean a big difference in your energy level. Since weight lifting requires a great deal of energy in order to perform the activity, cardio before can rob you of that energy. Particularly if you are the type to exert a great deal of energy during your cardio like running or interval.
I've tried performing cardio before a workout and I didn't have the energy or strength to really lift like I normally would. Not to mention that most people psyche up before they get to the gym for their workout, and that cardio time will give you too much of a chance to lose that mental energy.
Just my observations

Good post jplatz. Your observations are exactly correct. In order to gain muscle, you must overload that muscle to intice it to adapt to the overload and grow. If you deplete glycogen stores by doing cardio first, this robs you of the ability to maximally perform with the wieghts. Muscle in the grand scheme of things is your best fat burner, will always do this even at rest. Don't short circuit yourself. It is alright to a bit of light cardio for a few minutes to warm up, but that is all I would do.
