What carbs for energy w/out adding fat?

I'm trying to loose fat and gain muscle!
Here is what I'm eating- 3 oranges, two good green salads, 2 soy protein shakes, 8 egg whites, 2oz mixed nuts, & 1 cup of frozen peas everyday!
Someone told me I need more carbs for energy! I understand that, but I'm scared because my body loves storing carbs as fat! I tryied adding 1 serving of oatmeal and 1 serving of grapenuts to my daily intake! Guess what, within a week My legs looked like they gained inleast another inch of fat on them! I'm going to maybe try some kind of beans again! Just maybe 1 cup a day! I'm going to make sure to chew very well too! Maybe that was my problem, was I ate them too fast!
Would there be any other carbs in mind that would not put inches on me! I'm watching my fat too! I notice when you have to have regular eggs instead of whites, it sure adds up your fat %! I make sure I stay below 30%!

Thanks, but can you just have fiber carbs for energy or do you need complex carbs too! Because the complex carbs is what my body stores as fat! I would do fine on the fiber carbs! I already have some of the fiber carbs! How much should I have? Could you tell me how much % I should have of protein/carbs/fat?
