As aware as I am about the importance and benefits of recovery days, I still find it difficult to schedule true "rest" days. 
Instead, I try to incorporate restorative yoga or light (LIGHT) trail runs on my off days.  After a particular intense stretch of days, I'll take a true day off and do laundry!!  :P

Harder still?  Taking that periodic week off from lifting :(

Weekends are usually the typical rest/recovery days... however, I've found myself training people now about six days a week, so those days are kind of light in regards to exercise.  Nothing like an actually practice session for me, but still some activity.

I take days off. Maybe twice a year I end up taking an entire week off. I just hurt too bad if I take a week. I acually took 3 days off this weekend. We spend weekend canoeing or swimming from the boat and it rained dogs and cats for 3 days. We caught up on Big Love. What a sick bunch of puppies.
