I am looking fir fiid that is high in protein and low in fat, i need to have 160 g of protein and 30 of fat, i am finding this very difficult, any suggestions would be greatly appreciated!

Low fat cottage cheese, eggwhites, water packed tuna/salmon, minced or whole turkey. Smoothies with added protein.
Those are all high in protein.

Should I remove the egg yolks from the egg?

Yes remove them, that way you can mahave 3-4 eggs at a time for a nice omelet, and not worry about the fat from the yolk.
One egg white alone is 3g's of protein.
