Would this be a healthy recipe?

Pound Cake Recipe

Nonstick cooking spray
1/4 cup light butter
2/3 cup splenda
2/3 cup unsweetened applesauce
1/2 teaspoon vanilla extract
1 egg
2 egg whites
1 3/4 cups of a mixture of 85% whole wheat flour and 15% Soy flour
2 teaspoons baking powder
1 teaspoon salt
1/3 cup skim milk

Coat a 9 by 5-inch loaf pan with nonstick cooking spray; set aside. In a mixer, cream butter and splenda together. Then add applesauce and vanilla and beat until well blended. Add egg and egg whites and blend into mixture. In a separate bowl, sift together the flour, baking powder, and salt. With mixer on low, add 1/3 of the flour mixture and then add half of the milk; beat until combined. Add another 1/3 of the flour mixture, followed by the rest of the milk, and then the final 1/3 of the flour mixture. Scrape down the sides of the bowl and continue beating until just incorporated.

Pour batter into prepared loaf pan and bake for 1 hour or until a toothpick inserted in the center comes out clean. Allow to cool in pan for 10 minutes before slicing.

Healthier than regular pound cake, that's for sure!

This would be a good treat, occasionally.

I kinda changed around the ingredients a little bit. The flour is an idea of my own. The recipe really calls for all purpose flour, whole milk, and sugar. I got this off of that show Calorie Commando from the food channel.

No unfortunately I have not made them yet but I did make these all bran muffins yesterday. They were quite a treat and high in fiber. Here's the recipe. I tweaked it up a bit as well. I got this from the all bran kellogs website.

1 1/4 cups of a mixture of wheat and soy flour (85% wheat 15% soy) (substituted for all purpose flour)
1/2 cup Splenda (substituted for Sugar)
1 tablespoon baking powder
1/4 teaspoon salt
2 cups Kellogg’s All Bran Cereal
1 1/4 cups fat-free milk
1/4 cup of egg beaters (substituted for 1 egg)
1/4 cup unsweetened applesauce (substituted for oil)

1. Stir together flour, Splenda, baking powder and salt. Set aside.

2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. Let stand
about 2 minutes or until cereal softens. Add egg beaters and applesauce. Beat well. Add flour mixture,
stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups
coated with cooking spray.

3. Bake at 400° F about 20 minutes or until golden brown. Serve warm.
Yield: 12 muffins

Wow you can sub unsweetened applesauce for oil...that's new to me. Thanks for the info. I might need to try out that pound cake recipe though...I love that stuff but it's not in my list of things to eat so I avoid it. However neither myself or my wife are handy in the kitchen so it'll probably never get made.
