I just want to share a recipe of a very delicious and almost guilt-free treat I made today: chocolate coconut balls!! You'll need:
-250 grams of low-fat/fat-free vanilla crackers or graham crackers, made into very small,tiny crumbs(grind them if you can)
-50 grams low-fat margarin/butter
-1 big tabelspoon of dutch chocolate powder(sugar free)
-2 tablespoons splenda or prefered sugar substitute
-1.5 teaspoons each vanilla and rum aroma
-200 ml fat-free milk
-shredded coconut

Mix crumbs,butter,cocoa, sugar subst.,aromas. Add milk and mix, then let set for a few minutes until you have a thick dough-like mixture. Then with wet hands, form little balls and roll them in the shredded coconut. Put into fridge(if you can resist) for a few hours. Bon Apetit!!:big_smile:
