For real?? I NEVER would have fathomed that would work! Of course, I'm about as dumb as it gets when it comes to cooking.

Cottage cheese in a pancake. Never would have guessed. Maybe I can get the husband to try out that recipe.

you pour the batter all into the same spot toward the center of the pan and if you stove top is level, it will naturally form a round pancake. my husband has the same issue, but it bothers me more than him. as long as it's still edible, it doesn't matter to him.

thanks sandysford for the recipe. i've been looking for more ways to eat cottage cheese. i haven't had it since i was a kid and don't remember it being one of my favorites. but since it's high in protein, it's worth trying again... i think

I got to say, I did these pancakes yesterday morning, mixed the "batter" in the blender, (cheated a bit, put a small container of applesauce in with it), pours right out into perfect size pancakes! They were a great break from my usual breakfast, and very tasty. I sprinkled a bit of vanilla protein powder on them. Ironically, the amounts in the "batter" happen to be exactly my breakfast anyway, except a full cup cottage cheese.

Hey,
I just got around to making this this morning, I was craving comfort food...
It was really good! Ijust mixed it in a bowl and poured the whole thing into a pan, flipped when it was brown on one side, served warm with Atkins syrup - really good!

thanks for the bump asimmer - i must have missed these the first time around.

sounds much easier than the cottage cheese pancakes i make - those involve beating the egg whites till they're stiff, etc. i'll try these after my run on saturday!

any ideas on how long you can keep the batter in the fridge? old fashioned or quick oats?

I've been eating these for a while and when I remember I mix them up the night before and put in fridge. The oats soak overnight and I only have to dump it in the skillet in the am. I've been putting sweet potato butter on mine. It's like apple butter. Really good and only 5 carbs and 10 cals per Tbsp.

You could probably make your own sweet potato butter pretty easily, what is in it?

Okay,
here is what I did and it was pretty tasty. Canned pumpkin only has 10g carbs per 1/2 cup and is a good source of beta-carotene and fiber, so don't stress.

Bodybuilder Pumpkin Pancakes
1/3 c oatmeal
1/3 c cottage cheese
1/4 cup canned pumpkin
1 egg, 2 egg whites
dash of pumpkin pie spice or a dash each of :
ground cloves
ginger
nutmeg
cinnamon

1 packet splenda.

Mix well and spread in pre-heated, lightly oiled medium skillet. Cook 3-5 minutes (until golden brown and then flip and repeat on other side.
serve with Atkin's syrup or desired topping (I bet whipped cream would be good ;>)

Ok I am going to try this and make a version with unsweetened natural peanut butter instead of pumpkin althought the pumpkins sound good too. I like cottage cheese and this could be good. I will let y'all know how it came out.

I made the pancakes this weekend with blueberries (purple pancakes!) and Splenda. My roomies loved them :) Pumpkin sounds awesome...I'll have to try that one next weekend.

I found it in a Farmer's Market in Sedona, but my sister work's at a Farmer's Market nearby and says they have it too. I guess it is a staple at those places. It's kind of like apple butter. I will look at the ingredients and see if there is anything besides sweetpotatoes and some kind of sweetner. This weekend I got a mix for sweet potato pancakes from the Wild Oats store, I am anxious to try them. Of course I just like them baked/boiled with some Molly McButter on them too.

Trust me, they are very good. As I mentioned, if it is in your calorie scheme, add a cup of applesauce to the mix. It is great.

Bodybuilderancakes with a twist
1 egg, 2 egg whites
1 container raspberry carb control yogurt (had to find some way to use, it isn't very good on its own)
1/3 c scottish oats (old-fashioned oats)
1/3 c cottage cheese
cinnamon

Mix all together and let sit for a few minutes.
Preheat a large non-stick pan and lightly oil it.
Cook in batches like regular pancakes (makes about seven medium).

The whole recipe is 408 calories; 34% protein/42%CHO/26%fat
35g protein, 43.5g CHo (5.3g fiber), 12g fat
223mg choleterol, 453mg sodium

around 20% daily calcium, some potassium.

Hope you like this variation!

I get the Buckwheat Pancake mix from Carbsense.
It has 2g fat, 4g carbs and 29g protein. The instructions say to use a tbsp of oil, but I substituted it with applesauce, which was fine... it also calls for 1/3 cup water, but it's more like 1/2 cup...

pritchard - if you can read, you can cook.
Buy a basic cookbook and spend a little time learning the ins and outs - it makes life a lot easier to be able to cook. Plus, it impresses the ladies....

These are really good! I usually make a double batch and save some for later in the week. A few berries and sugar free syrup and it's almost like you're cheating. In a word: yum!

Aww man, I made these today for lunch and they didn't come out right! For some reason they didn't cook all the way through and I ended up eating batter with my pancakes. It was ok since I put strawberries and light whipped cream on them, but anyone know what I did wrong cuz they were pretty much black on the outside!!

I cook mine on pretty low heat for a long time to avoid the pudding in the middle...

Or cook them in little batches like pancakes.

PS these are good even when you just do 1/2c oats, 5-6 egg whites, cinnamon and splenda...

It just means you are sending a post back up to the top of the forum so people will see it again, or sometimes so a specific person can find it.
